Red meat lovers, rejoice! There are budget-friendly steaks out there that can dazzle a crowd. Grilled, sliced thin, and seasoned to perfection, they’ll wow your crowd with mouthwatering, flavor without breaking the bank.

The Chopping Block:
A steak dinner doesn’t have to be an 8 oz. porterhouse on every plate! It can be wallet and waist friendly cuts. Smart and tasty choices, that are absolutely delicious when seasoned, grilled to perfection and thinly sliced across the grain; gettting you more bang for your buck. What are they you ask?
There are four cuts, you need to know about.
Sirloin Steak is the most flavorful of the four. Well priced, and generally the most tender, you would cook a ½ inch to ¾ inch thick steak for 3 minutes per side.
Next, is Skirt Steak. It is long, and thicker on one end which makes it easier to handle, and allows for even cooking. I recommend that you cut it into pieces before grilling. Cook a ½ inch thick steak 2 to 4 minutes per side, 2 minutes for rare.
There is also the Hanger Steak, (also referred to as Flat Steak.) This steak is less talked about, but packs the biggest flavor profile if executed correctly. Cook a 1 to 1 ½ inch thick steak, for 6 to 7 minutes on each side.
Last is my personal favorite, the Flank Steak. (referred to as London Broil.) This steak is best when served medium rare, and takes well to spices such as cumin, and garlic. Cook a ¾ inch to 1 inch steak for 5 to 6 minutes per side.
Things to Remember:
These cuts should never be overcooked. Start by getting a good sear, and I recommend serving these medium rare, which is 125 degrees before resting. Grill them quickly on high heat, and let them rest 5 to 10 minutes before slicing.
Remember, the difference between a tender and tough bite of steak is all in the slicing. Always slice against the grain. Most importantly, have fun! Play with the ingredients, make them your own.

Grilled Peach and Sweet Pepper Salsa
Serves 4
Prep time 20 minutes.
Ingredients:
1 1/2 TBSP of vegetable oil
3 peaches, halved with pits removed
1 small sweet red pepper
3 garlic cloves, minced
1 Serrano pepper, seeded, and minced
2 Roma tomatoes, diced
2 Tbsp fresh lime juice
1/2 cup finely shredded Italian parsley
Pink sea salt (kosher works also)
Procedure:
Heat grill to medium high. Spray with Pam spray to keep from sticking.
Toss peaches and pepper in oil and grill turning occasionally until grill marks are visible and peaches and all sides of pepper are charred and fork tender. (About 7 minutes)
Remove from grill and allow to cool. Then dice all the peaches and 1/4 cup of the pepper and combine with garlic, Serrano, tomatoes, and lime juice. Season with 1 1/2 tsp of pink sea salt. Let stand, and fold in parsley….
